Ingredients:
- 3 tablespoon Ghee or 1/2 cup oil if you will like the dish crispy
- 1 medium Onion; peeled, halved lengthwise, sliced lengthwise into paper-thin slivers
- 1 teaspoon Salt
- 1 pound Okra (washed, pat dried with a cloth and then cut lengthwise Quartered)
- 1 tbsp cumin seeds
- 1tbsp. coriander powder
- 1 tsp. turmeric
- 1 tsp minced ginger
- In skillet, heat ghee over moderate heat.
- Add onion, stir 7-8 minutes until golden brown.
- Add cumin and let the cumin sizzle.
- Add rest of the spices and ginger.
- Add okra and salt.
- Continue to fry, lifting and turning vegetables constantly, for 25 minutes until okra is tender and most of the liquid has evaporated.
