Cucumber and Tomato Yogurt/Kheera-Tamatar Raita

Ingredients:
  • 2 c. (16 oz.) plain yogurt 
  • 1 medium tomato, chopped 
  • 1 peeled cucumber, chopped 
  • 1 small onion, chopped 
  • 3 tbsp. chopped fresh coriander 
  • salt and pepper to taste 
  • dash of cayenne pepper (optional)
Method:
  • In a bowl, beat yogurt until smooth. 
  • Combine yogurt with remaining ingredients and mix well. 
  • Cover bowl and chill at least 1 hour before serving. 
Preparation time: 15 minutes
Refrigeration time: 60 minutes
Serves 4
