Ingredients:
- 1 medium eggplant, peeled and cubed
- 2 medium zucchini, sliced
- 2 medium tomatoes, diced
- 1 large onion, sliced
- 2 cloves garlic, pressed
- 3/4 tsp. basil
- 1 tsp. salt
- STEAM eggplant, zucchini, and onions in small amount of water, just until tender (about 10–15 minutes).
- ADD garlic, tomatoes, basil, and salt, and steam 5 more minutes.
