Poha Upma

Ingredients:
  • 2 cups poha (beaten rice)
  • 1 potato, boiled, peeled & chopped into cubes
  • 1/2 cup onion, chopped finely
  • 2 green chilies, chopped finely
  • 2 dry red chilies, broken into pieces
  • salt to taste
  • 1 tsp turmeric powder
  • 1 tbsp coriander leaves for garnishing
For seasoning:
  • 1 tsp mustard seeds
  • 1 tsp urad dal
  • 1 tsp channa dal
  • 1 tsp curry leaves
  • 1 tbsp oil
Method:
  • Wash the poha and soak in 1/2 cup of water for about 5 to 7 minutes.
  • In a pan heat the oil. Add all the seasoning ingredients and fry for 3 minutes. Then add the chopped onions, green chilies, red chilies and saute until golden brown.
  • Then add the boiled potatoes, turmeric powder, salt and mix well. Finally, add the soaked poha and mix well. Keep on low heat for about 5 minutes.
  • Serve hot garnished with coriander leaves
