Ingredients:
- 4 cups vegetable stock
- For vegetable stock, boil 1 onion, 1 carrot, 1/2 cup bottle gourd and 2-3 french beans in 4 cups water, till soft. Blend in mixer grinder, strain and use.
- 1/2 onion ,chopped fine
- 1/4 tsp ginger paste
- 1/4 tsp garlic paste
- 1/4 tsp. cumin powder
- 2-3 pinches turmeric powder
- 1 tsp curry powder
- salt to taste
- 1/2 cup frozen corn
- 1/2 cup tomatoes, chopped finely
- 1/4 cup tomato puree
- 2 tbsp raw rice
- 2 tbsp moong dal (yellow)
- 1 tbsp oil
Method:
- Heat oil in a pan
- Fry onion, ginger and garlic till transparent
- Add cumin powder, turmeric and curry powder
- Add vegetable stock and bring it to boil
- Add moong dal and let it cook for 2-3 minutes.
- Add rice, corn, tomatoes and puree
- Let it cook till rice is done
- Serve hot. Soup sticks, pepper and salt, as desired.
