Wintry Soup


Ingredients:
  • 4 cups vegetable stock
  • For vegetable stock, boil 1 onion, 1 carrot, 1/2 cup bottle gourd and 2-3 french beans in 4 cups water, till soft. Blend in mixer grinder, strain and use.
  • 1/2 onion ,chopped fine 
  • 1/4 tsp ginger paste 
  • 1/4 tsp garlic paste 
  • 1/4 tsp. cumin powder 
  • 2-3 pinches turmeric powder
  • 1 tsp curry powder 
  • salt to taste 
  • 1/2 cup frozen corn 
  • 1/2 cup tomatoes, chopped finely 
  • 1/4 cup tomato puree 
  • 2 tbsp raw rice 
  • 2 tbsp moong dal (yellow) 
  • 1 tbsp oil
Method:
  • Heat oil in a pan 
  • Fry onion, ginger and garlic till transparent 
  • Add cumin powder, turmeric and curry powder 
  • Add vegetable stock and bring it to boil 
  • Add moong dal and let it cook for 2-3 minutes. 
  • Add rice, corn, tomatoes and puree 
  • Let it cook till rice is done 
  • Serve hot. Soup sticks, pepper and salt, as desired.
