Lentil & Brown Rice Soup

This is a real easy to make vegetarian soup. Very hearty, very tasty.
Ingredients:
  • 1 envelope onion soup mix
  • 4 1/2 cups water
  • 3/4 cups dry lentils, rinsed and drained
  • 1/2 cup uncooked brown rice
  • 1 can coarsely chopped, whole peeled tomatoes, undrained
  • 1 medium carrot, coarsely chopped
  • 1 large stalk celery, coarsely chopped
  • 1/2 tsp basil leaves
  • 1/2 tsp oregano
  • 1/4 tsp thyme leaves
  • 1 tbsp finely chopped parsely
  • 1 tbsp apple cider vinegar
  • 1/4 tsp pepper
Method:
  • In large saucepan, combine onion soup, water, lentils, rice, tomatoes, carrot,oregano, thyme and basil together. 
  • Bring mixture to a boil and simmer covered stirring occasionally 45 mins or until lentils and rice are tender. 
  • Stir in parsely, vinegar and pepper and serve. 
  • Great with rye bread.
