Peanut Butter and Honey Banana Ice Cream


Ingredients:
  • Banana -- 1 1/2 peeled medium, sliced into coins and frozen until solid
  • Peanut butter -- 3 tablespoons
  • Honey -- 2 teaspoons
Method:
  • Blend bananas in food processor until they are the consistency of soft serve ice cream.
  • Blend in peanut butter and honey, and transfer to a freezer container and freeze until solid.

Khajur Barfi

Ingredients:
  • Condensed Milk -- 500 ml
  • Dates -- 500 gms, deseeded
  • Mixed Dryfruits (badam, cashew, pista) -- 250 gm
  • Dessicated Dry Coconut -- 1/2 cup
Method:
  • Break up dates coarsely
  • Add milk and dryfruit all in a heavy, non-stick pan.
  • Cook on slow flame, stirring continuously.
  • Do not allow to stick to bottom.
  • It takes a while to cook
  • Stir gently till a soft lump forms.
  • Spread some of the coconut on a butter paper sheet.
  • Grease hands and take a chunk of the mixture and roll into a thick roll, on the sheet, all the coconut to cover it.
  • Chill the rolls in the fridge
  • Cut into slices Or set in a tray and cut into squares.

Egg Omelette - II

Ingredients:
  • Egg -- 1
  • Onion -- 3 tbsp, cut into pieces
  • Green Chilli -- 1
  • Red Chilli Powder -- 1 tbsp
  • Tomato -- 2tsp, chopped (optional)
  • Carrot -- 1 tsp, chopped (optional)
  • Salt -- As per required
  • Oil -- 2 tsp
Method:
  • Beat egg well in a bowl.
  • Add salt,chilli powder to it and again beat for 1 min.
  • Now add onion,tomato,chilli,carrot and mix well.
  • Heat a flat pan,pour oil.
  • Pour the egg mixture on the pan and spread it evenly.
  • After 1 min, flip it over and again cook for 1 min.
  • Serve hot.
Note:
If you want, you can add 1/2 tsp of Garam Masala Powder.

Egg Omelette-I

Ingredients:
  • Egg -- 1
  • Salt -- as per required
  • Red Chilli Powder -- 1/2 tsp
  • Oil -- 1 tsp
Method:
  • Beat egg well in a bowl.
  • Add salt and chilli powder to it.Again beat for few seconds.
  • Take a flat pan,heat oil and pour the egg mixture into it.
  • Slowly spread the mixture on the pan.
  • Cook for 2 min.
  • Flip over the omelette to other side and cook for 1 min.
  • Remove form pan and serve hot.

Bonda

Ingredients:

  • All Purpose Flour -- 1 Cup
  • Rice Flour -- 2 tbsp
  • Curd -- 1 Cup
  • Cooking soda -- 1/4 tsp
  • Salt -- as per required
  • Oil -- for deep frying

Method:

  • Mix all the ingredients except oil.
  • See that the batter is thick.If necessary add some water or curd to make batter.
  • Cover it with a lid and let it stay for overnight.
  • Heat oil in a vessel. Shape the batter into round bondas. 
  • Fry them on low flame till golden in color. 
  • Serve hot with chutney or sambar.

Note:
The bondas are very tasty if you ferment the batter overnight.
If not possible, prepare the batter at least one hour before.

Broken Rice Upma



Ingredients:
  • Rice Ravva -- 1 Cup
  • Onion -- 1 medium sized
  • Cumin Seeds -- 1 tbsp
  • Green Chilli -- 5
  • Ginger -- 1 inch
  • Black gram -- 2 tbsp
  • Bengal Gram -- 3 tbsp
  • Green Gram -- 2 tbsp
  • Mustard -- 2 tbsp
  • Curry Leaves -- few
  • Water -- 3 Cups
  • Salt -- as per required
Method:
  • Heat a vessel,fry the rice ravva for some time. 
  • Remove ravva from vessel and keep it aside. 
  • Now pour oil into the vessel,add all the ingredients except water and ravva. Fry them for 2 min.
  • Now add water and salt to it. Let water boils. Here check the taste of the water, so that you can add some salt. 
  • Now slowly pour ravva into the vessel by stirring continuously so that no lumps are formed.
  • Let it cook for 2 min on a high flame. 
  • Now simmer the flame and cook till done.
  • Swich off the stove,cover the lid and wait for 5 min. 
  • Now the upma is done. Serve hot. 

Broken Wheat Upma


Ingredients:
  • Broken Wheat/ Dalia-- 1 Cup
  • Onion -- 1 medium sized
  • Tomato -- 2
  • Green Chilli -- 5
  • Garlic -- 1 inch
  • Potato -- 1 medium sized (Optional)
  • Black gram -- 2 tbsp
  • Bengal Gram -- 2 tbsp
  • Mustard -- 2 tbsp
  • Ground nuts -- 2 tbsp
  • Curry Leaves -- few
  • Water -- 3 Cups
  • Turmeric powder -- a pinch
  • Salt -- as per required
Method:
  • Heat a vessel,fry the dalia till it becomes light reddish. 
  • Remove dalia from vessel and keep it aside. 
  • Now pour oil into the vessel,add all the ingredients except water and dalia. Fry them for 2 min.
  • Now add water and salt to it. Let water boils. Here check the taste of the water, so that you can add some salt. 
  • Now slowly pour dalia into the vessel by stirring continuously so that no lumps are formed.
  • Let it cook for 2 min on a high flame. 
  • Now simmer the flame and cook till done.
  • Swich off the stove,cover the lid and wait for 5 min. 
  • Now the upma is done. Serve hot. 

Vermicelli Upma

Ingredients:
  • Vermicelli -- 2 Cups
  • Onion -- 1 medium sized
  • Tomato -- 2
  • Green Chilli -- 5
  • Garlic -- 1 inch
  • Potato -- 1 medium sized (Optional)
  • Black gram -- 2 tbsp
  • Bengal Gram -- 2 tbsp
  • Mustard -- 2 tbsp
  • Ground nuts -- 2 tbsp
  • Curry Leaves -- few
  • Water -- 4 Cups
  • Salt -- as per required
Method:
  • Heat a vessel,fry the vermicelli till it becomes light reddish. 
  • Remove vermicelli from vessel and keep it aside. 
  • Now pour oil into the vessel,add all the ingredients except water and vermicelli. Fry them for 2 min.
  • Now add water and salt to it. Let water boils. Here check the taste of the water, so that you can add some salt. 
  • Now slowly pour vermicelli into the vessel by stirring continuously so that no lumps are formed.
  • Let it cook for 2 min on a high flame. 
  • Now simmer the flame and cook for 2 more min or till the mixture becomes lightly watery.
  • Swich off the stove,cover the lid and wait for 5 min. 
  • Now the upma is done. Serve hot. 

Upma



Upma is the simple and easy recipe.It is a favourite breakfast recipe for many. It takes very less time to prepare.
Ingredients:
  • Sooji Rava -- 1 Cup
  • Onion -- 1 small, chopped
  • Chilli -- 2, cut into pieces
  • Tomato -- 1 small, cut into pieces(Optional)
  • Mustard Seeds -- 1 tbsp
  • Black Gram -- 1 tbsp
  • Bengal Gram -- 1 tbsp
  • Peanuts -- 1 tbsp (Optional)
  • Curry Leaves -- few
  • Water -- 3 Cups
  • Salt -- as per required
  • Oil -- 3 tbsp
Method:
  • Heat a vessel,fry the rava till a nice aroma comes or till it becomes light reddish.
  • Remove rava from vessel and keep it aside.
  • Now pour oil into the vessel,add all the ingredients except water,rava.
  • Fry them for 2 min.
  • Now add water and salt to it.
  • Let water boils. Here check the taste of the water, so that you can add some salt.
  • Now slowly pour rava into the vessel by stirring continuously so that no lumps are formed.
  • Let it cook for 1 min.
  • Swich off the stove and wait for 5 min.
  • Now the upma is done.
  • Serve hot.
Note:
If you want to colour it you can add some turmeric powder during frying the ingredients in oil.
Yo can also add carrot,peas,potato along with tomato.

Vermicelli Idli



Ingredients:

  • Vermicelli -- 1 Cup, split itno small pieces
  • Suji Rava -- 1/2 cup
  • Yoghurt -- 1 cup
  • Salt -- As per required
  • Fruit Salt --  1 tbsp
  • Cashew -- few
  • Black Gram -- 2 tbsp
  • Mustard Seeds -- 1/2 tbsp
  • Curry Leaves -- 2 strands
  • Chilli -- 3
  • Oil

Method:

  • Heat a vessel,pour oil and fry roast the vermicelli.
  • Remove vermicelli and now add suji rava to the vessel and fry roast it.
  • Keep them aside.
  • Now mix vermicelli,rava,salt,yoghurt.To this add water to form the idli batter.
  • Again heat vessel,pour oil.Fry cashew,black gram,mustard,chilli.
  • Add this mixture to idli batter.
  • Add fruit salt and keep aside the batter for 30 min.
  • Now take the idli plates, grease them and pour idli batter to it.
  • Steam cook idli.
  • Serve hot with Coconut Chutney.

Vermicelli Custard


Ingredients:
  • Milk -- 1000 ml
  • Vermicelli -- 1 cup
  • Sugar -- 1/2 cup
  • Custard Powder -- 1 tbsp, Strawberry Flavour
  • Strawberry Essence -- 1/4 tbsp
  • Cream -- 2 tbsp
  • Badam, Pista , Cashew nuts-- 2 tbsp,chopped
Method:
  • Pour milk in a heavy bottomed vessel.Take 2 or 3 tbsp of milk from it and keep it aside.
  • Now boil milk.Add vermicelli to it.
  • When the vermicelli is cooked well, add sugar and essence to it.
  • Mix custard powder to the milk which we kept aside. See that no lumps are formed.
  • Add this mixture to the boiled milk and vermicelli mixture.
  • Sim the fire and stir the mixture until it thickens.
  • Now add the nuts and keep it in refrigerator until it gets cool.
  • Serve the chilled Custard.


Vermicelli Dosa


Ingredients:

  • Vermicelli -- 2 Cups
  • Suji Rava -- 1 Cup
  • Rice Flour -- 1 Cup
  • Sour Curd -- 1 Cup
  • Cumin Seeds -- 1 tbsp
  • Salt -- as per required
  • Water -- Sufficient to mix the batter
  • Oil -- 1/2 Cup

Method:

  • Mix well all the ingredients except water and oil.
  • Now slowly add water to form the dosa batter.
  • Let it rest for 1 hour.
  • Heat pan, take a ladder ful of batter and spread it in the form of dosa.
  • Let it cook til the dosa is reddish in colour.
  • Remove from pan and serve hot with Chutney.

Vermicelli Soup

Ingredients:
  • Vermicelli -- 1/4 Cup (Split into pieces)
  • Vegetable Stock -- 3 Cups
  • Fresh Cream -- 1 tbsp
  • Oil -- 1 tbsp
  • Garlic -- 2 tbsp, chopped
  • Onion -- 2 tbsp, chopped
  • Tomato -- 3/4 cup ,cut into pieces
  • Tomato puree -- 1 tbsp
  • Pepper Powder -- 1/2 tbsp
  • Cilantro Leaves -- few, chopped
  • Salt -- as per required
  • Lemon -- 1
Method:
  • Heat oil in a vessel.
  • Fry chopped garlic and onion for 2 min.
  • Add tomato pieces,fry for 2 min.
  • Now add tomato puree,salt,pepper powder,vegetable stock.
  • Boil this mixture for 15 min or until thickens.
  • Now grind this mixture to form a paste.
  • Now take this paste into a vessel and put it on the stove.
  • Add vermicelli to it and cook until vermicelli is cooked well.
  • Garnish with cream and cilantro leaves and lemon wedges.
  • Serve hot.

Vermicelli Vada


Ingredients:
  • Vermicelli -- 1 cup
  • All Purpose Flour -- 1/2 cup
  • Suji Rava -- 1/2 cup
  • Onion chopped -- 1 cup
  • Chills -- 2 or 3
  • Ginger -- 1" piece
  • Cumin seeds -- 1/2 tbsp
  • Ground Nuts -- 1 cup
  • Coriander Powder -- 1 tbsp
  • Salt -- as per required
  • Oil -- for deep frying
Method:
  • Grind the chillis and ginger into a fine paste.
  • Now mix all the ingredients except oil  to this paste.
  • Take some quantity of mixture and shape it into vada.
  • Make vadas with the mixture and deep fry in oil.
  • Serve with Mint chutney.


Cornflakes Ladoo


Ingredients:

  • Cornflakes -- 250 gms
  • Sugar -- 1/4 cup
  • Honey -- 3 cups
  • Elachi Powder -- 1/2 tsp
  • Almonds and Cashew Nuts -- 1/4 cup
  • Milk -- 2 tsp
Method:
  • Dry roast the nuts. Grind them to a fine powder.
  • Powder cornflakes and sugar separately.
  • Add all the powders and honey.
  • Now add milk and shape the mixture into Ladoos.

Vermicelli Ladoo



Ingredients:
  • Vermicelli -- 250 gms (cut into pieces)
  • Koya -- 150 gms
  • Nuts -- 50 gms(your choice like cashew,badam,pista; or combination of all)
  • Sugar -- 1/2 cup
  • Ghee -- 4 tbsp
  • Cardamom Powder -- 1/2 tsp
Method:
  • Take a bowl.Mix nuts,sugar,koya,cardamom powder.
  • Take a pan, pour ghee into it.Fry vermicelli in the pan till it becomes reddish.
  • Now add koya mixture into it.Fry for another two minutes.Mix well.
  • Switch off the flame.Let it cool.
  • Now take a small amount of mixture and shape it to Ladoo.
  • To make the shape if necessary,add some ghee.


Dry Fruit Ladoo



Ingredients:
  • Cashew nuts -- 100gms
  • Raisins -- 50gms
  • Almonds -- 1/4 cup
Method:
  • Fry cashew nuts for 2 min in a low flame.Let it cool.
  • Chop cashew and almonds into fine pieces.
  • Now grind the raisins in a blender into a fine paste.
  • Mix all these ingredients.
  • The mixture is wet due to raisins paste.
  • Now take a small amount of mixture and shape it as ladoo.
  • Now the healthy ladoos are ready.
Note:
  • If you want more sweetness increase the quantity of raisins.
  • As there is no sugar.. it is very healthy and fat free.
  • The unsaturated fat in this ladoo is good for heart.
  • This ladoo consists of zinc which is helpful for curing wounds quickly.



Chickpeas Fry

Ingredients:
  • Chickpeas -- 2 cups(Boiled)
  • Potato -- 1 cup, boiled and cut into pieces
  • Tomato -- 1 cup, boiled and cut into pieces
  • Green chilli paste -- 2 tsp
  • Ginger paste -- 1 1/2 tsp
  • Garlic Paste -- 2 tsp
  • Chana Masala Powder -- 2 tsp
  • Black Salt -- 1 tsp
  • Dried Mango Powder -- 1/2 tsp
  • Slat as per required
  • Oil -- 3 tsp
  • Cilantro leaves -- 1/4 cup chopped
Method:
  • Heat oil in a vessel on a medium flame.
  • Fry potato pieces for 5 min.
  • Now add green chilli paste, ginger and garlic paste.Fry them for 1 min.
  • Now add all the remaining ingredients and mix well.
  • Pour 1/2 cup of water into it and mix well.
  • Close the lid and stay until all the water got evaporated.
  • Switch off the heat.
  • Garnish with Cilantro leaves and serve hot with rotis.

Soya Ladoo

 

















Ingredients:
  • Soya Beans -- 100 gms
  • Sesame Seeds -- 100 gms
  • Dates -- 200 gms
  • Honey -- 1 tbsp
Method:
  • Take a pan fry soya beans and sesame seeds separately.
  • Let them cool.
  • After that grind them into a fine powder.
  • Sieve the mixture and set aside.
  • De-seed the dates and mash them into paste.
  • Now by adding honey shape them into round ladoo.
Note:
If necessary add some water.see that not to add excess water.The paste must be hard.
This is a very healthy sweet which consists fo calcium,protiens.
Good for pregnant women,kids,and those who are in menopause state.

Vermicelli Pudding

Ingredients:
  • Vermicelli -- 1 cup
  • Honey -- 3/4 cup
  • Water -- 4 cups
  • Cardamom Powder -- 1 tsp
  • Cream -- 5 tbsp

Method:
  • Take a vessel,pour water into it and boil for some time.
  • Now slowly pour vermicelli into the boiled water and cook until done.
  • Remove from heat and let it cool.
  • Remove any excess water and pour honey into it and again cook till the honey melts well.
  • Now add cream and cardamom powder to it.
  • Remove from heat and serve hot.

Breakfast Recipes

There is no standard Indian breakfast menu as almost each state in India has different specialities. However, one can broadly classify breakfast varieties in India into 2 types; North Indian and South Indian. The eastern and western parts of India also have individual breakfast items unique to their culture or state.
South Indian breakfast consists of idli, vada and/or dosa coupled with chutney and sambar. Many variations of these dishes exist such as Rava idli, Dahi Vada and Masala Dosa. Other popular south Indian breakfast items are Bisibelebath, Upma, Lemon Rice and Poori. The state of Kerala has some special breakfast items such as appam, idiyappam, palappam .

A typical north Indian breakfast may either be a type of Paratha or Roti served with a vegetable curry, curd and pickles. There are several varieties of parathas available depending on the type of stuffing such as Aloo (potato) Paratha, Paneer (cottage cheese) Paratha, Mooli (radish) Paratha etc. Other popular breakfast items in the north are Poori Bhaji, Poha and Bhindi Bhujia.
